1 (16 ounce) can chickpeas |
1 english cucumber, chopped (seeded if necessary) |
1 1/2 cups halved grape tomatoes |
3 tablespoons thinly sliced red onions |
2 tablespoons chopped fresh cilantro |
1 tablespoon chopped mint (optional) |
1 tablespoon lemon juice |
1/2 tablespoon apple cider vinegar |
3 tablespoons olive oil |
salt and pepper |
Directions:
1. Mix together vegetables (chickpeas, cucumber, tomatoes, onion). 2. Toss with cilantro and mint (if using). 3. Sprinkle with freshly ground pepper. 4. Whisk together lemon juice, cider vinegar, and 1/2 tsp salt. Add olive oil and whisk until emulsified. 5. Toss with salad. Taste for seasoning and adjust (you may want to add more lemon juice or vinegar depending on how acidic you like it). |
