Ingredients:
14 1/2 ounces no-salt-added garbanzo beans, drained
2 1/2 lbs fresh tomatoes, chopped and drained (3 cups) or 35 ounces canned diced tomatoes, drained
1/4 cup fresh dill, chopped
1/4 cup fresh basil, chopped
2 tablespoons olive oil
2 tablespoons red wine vinegar
1 garlic clove, minced
1/2 teaspoon kosher salt
fresh ground pepper, to taste
Directions:
1. Toss chickpeas, tomatoes, dill, basil, oil, vinegar, and garlic.
2. Let stand for 15 minutes, then add up to 1/2 teaspoon kosher salt and freshly ground pepper, to taste.
