From Vegetarian Times Cooks Mediterranean. Ingredients:
6 cups water |
2 (17 ounce) cans chickpeas (rinsed and drained) |
1 tablespoon olive oil |
2 teaspoons dried sage |
2 teaspoons dried rosemary |
1 teaspoon ground cinnamon |
1 teaspoon salt |
1/2 teaspoon fresh ground pepper |
2 tablespoons finely chopped parsley |
Directions:
1. In a large pot, combine all ingredients except the parsley. 2. Bring the mixture to a boil over high heat, then lower the heat and simmer, partially covered, for 20 minutes. 3. Serve the soup garnished with the parsley. |
