Ingredients:
6 cups water
2 (17 ounce) cans chickpeas (rinsed and drained)
1 tablespoon olive oil
2 teaspoons dried sage
2 teaspoons dried rosemary
1 teaspoon ground cinnamon
1 teaspoon salt
1/2 teaspoon fresh ground pepper
2 tablespoons finely chopped parsley
Directions:
1. In a large pot, combine all ingredients except the parsley.
2. Bring the mixture to a boil over high heat, then lower the heat and simmer, partially covered, for 20 minutes.
3. Serve the soup garnished with the parsley.
