Fast and easy soup for those busy days. Ingredients:
1 garlic clove, whole |
1 teaspoon rosemary |
4 tablespoons oil |
2 tomatoes, chopped |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1 (19 ounce) can chickpeas |
3 cups chicken broth |
1 1/3 cups large cut pasta |
Directions:
1. Sauté garlic and rosemary in oil, until garlic is golden brown. 2. Remove garlic from oil. 3. Add tomatoes, salt and pepper. 4. Simmer 6-7 minutes. 5. Add chickpeas and chicken broth. 6. Bring to a boil, add pasta and simmer 8-9 minutes more, till pasta is tender. 7. Stir occasionally. 8. Enjoy. |
