1 15-oz can chickpeas |
2 tbsp vegan mayonnaise |
1 tbsp mustard (yellow or dijon) |
2 stalks celery, chopped |
1/2 cup chopped green pepper |
1/2 cup chopped red onion |
1/4 tsp lemon juice |
salt and pepper, to taste |
8 slices of bread |
lettuce, tomato, or other vegetables |
Directions:
1. Place the chickpeas in a large bowl. Mash with a masher or fork. Stir in the mayonnaise, mustard, celery, green pepper, onion, lemon juice, salt, and pepper. Spread onto your favourite bread and pile on lettuce, tomato, and any other of your favourite veggies. Also tastes great toasted! |
