Really easy and a nice, fresh summer salad. Ingredients:
1/2 green bell pepper, chopped |
1/2 purple onion, chopped |
2 cans chickpeas (garbanzo beans), drained & rinsed |
1 carrot, shredded |
1/4 cup lemon juice |
2 tbsp olive oil |
1/4 cup parsley, chopped |
Directions:
1. Combine all ingredients. Better when left in the frige for several hours. |
