A satisfying and delicious salad full of protein, fibre and healthy fats. Very versatile - use up whatever veggies you have on hand and as many as you can fit in there for added nutritional and visual appeal! Prep time will depend on how long it takes you to chop all the veggies. Ingredients:
1 can chickpeas, drained & rinsed |
1-2 tomatoes, cubed |
1 small red onion, sliced/chopped |
1 sweet pepper (red, orange, yellow), chopped |
other veggie suggestions (use any or all) |
broccoli, corn, cucumbers, celery, baby spinach, zucchini, carrots, beets, mushrooms |
dressing (this is what makes it sooo tasty!!) |
2 tbsp extra virgin olive oil |
1 tbsp balsamic vinegar |
1 tbsp lemon juice |
1-2 cloves garlic, crushed (add more for extra garlickyness) |
1 tbsp ground flax seed |
1 tbsp basil |
Directions:
1. Combine all the salad ingredients into a large bowl. 2. In a small bowl or dressing shaker, combine dressing ingredients and mix well. Immediately pour over salad and toss to ensure it's evenly covered. 3. Serve immediately, or cover and refrigerate. |
