Williams-Sonoma Vegetarian p43 Ingredients:
1 cup dried chickpeas |
1/4 cup red wine vinegar |
6 tbsp olive oil |
4 cloves garlic |
1 tbsp minced fresh mint |
1 tbsp minced fresh basil |
1 tsp minced fresh thyme |
1 tsp minced fresh rosemary |
1 tsp minced fresh oregano |
1 salt and pepper to taste |
1/4 cup kalamata olives |
1/4 cup olives |
1/4 cup sliced green onions |
Directions:
1. Soak chickpeas about 3 hours. Drain. Cover with water and cook uncovered until tender, 45-60 minutes. 2. Chop olives. Add to cooked drained chickpeas. 3. Whisk together remaining ingredients. Add to chickpea and olives. Toss to coat. Serve at room temp or chill. |
