Ingredients:
1 cup dried chickpeas
1/4 cup red wine vinegar
6 tbsp olive oil
4 cloves garlic
1 tbsp minced fresh mint
1 tbsp minced fresh basil
1 tsp minced fresh thyme
1 tsp minced fresh rosemary
1 tsp minced fresh oregano
1 salt and pepper to taste
1/4 cup kalamata olives
1/4 cup olives
1/4 cup sliced green onions
Directions:
1. Soak chickpeas about 3 hours. Drain. Cover with water and cook uncovered until tender, 45-60 minutes.
2. Chop olives. Add to cooked drained chickpeas.
3. Whisk together remaining ingredients. Add to chickpea and olives. Toss to coat. Serve at room temp or chill.
