Ingredients:
1 can chickpeas, drained and rinsed |
teaspoon dried mint |
1 tablespoon cider vinegar |
1 small tomato, seeded and diced |
2 tablespoons olive oil |
salt and pepper, to taste |
1/2 red onion, thinly sliced |
1 clove garlic, minced |
Directions:
1. In medium bowl combine chickpeas, tomato, onion, garlic and mint. Add vinegar and olive oil. Toss to coat. Season with salt and pepper. Chill and serve |
