Plan to make this about an hour before serving to let the flavors meld. Ingredients:
2 cups cooked chickpeas |
1 red onion, diced |
1/4 cup olives, pitted and chopped |
1 red bell pepper, chopped |
3 cloves garlic, minced |
2 tbsp parsley, chopped |
1 tsp dried oregano |
1 pinch dried red pepper flakes |
2 tbsp extra virgin olive oil |
1 tsp white wine vinegar |
1 freshly ground black pepper to taste |
Directions:
1. Mix all ingredients together, marinate in the refrigerator for at least 30 minutes before serving. |
