This is a really simple salad, very straight-forward flavors. You can add lots of extras, this is great with fresh summer produce. Ingredients:
2 cups chickpeas, rinsed and drained |
1/3 cup olive oil |
1/4 cup minced fresh parsley |
1 lemon, juice of |
1 teaspoon salt |
Directions:
1. Mix all ingredients. 2. Chill at least 30 minutes before serving. |
