Chickpea Pasta with Almonds Ingredients:
1 tbsp olive oil |
3 cloves garlic, chopped |
7 cups chicken broth |
1/2 tsp crushed red pepper |
12 oz angel hair pasta |
15 1/2 oz canned chickpeas, rinsed |
1 cup fresh parsley, chopped |
1/2 cup parmesan cheese |
1/4 cup almonds, roasted, chopped |
Directions:
1. Heat oil in a large saucepan over medium-high heat. 2. Add the garlic and cook, stirring, for 1 minute (do not let it brown). Add the broth, pepper and salt to taste and bring to a boil. 3. Add teh pasta and cook, stiriing occasionally until the broth is nearly absorbed and pasta is al dente, about 6 minutes. stir in chickpeas and parsley. Sprinkle with cheese and almonds before serving. |
