This salad is popular in the Middle East. Ingredients:
1 (19 ounce) can chickpeas, drained |
1/2 cup black olives, pitted & chopped |
1/4 cup scallion, chopped |
2 tablespoons fresh cilantro, finely chopped |
1 garlic clove, crushed |
1 tablespoon olive oil |
2 tablespoons lemon juice |
1/2 teaspoon paprika |
1/8 teaspoon cayenne powder |
salt, to taste |
Directions:
1. Mix all the ingredients together in a glass bowl until well blended. 2. Serve at room temperature. |
