You can sprinkle these on salads or use them for crunchy chickpea tacos! They get their crunch from baking in the oven. Ingredients:
1 (15 ounce) can chickpeas, drained and rinsed |
1 tablespoon lime juice, freshly squeezed |
1 tablespoon olive oil |
1/2 teaspoon salt |
1/2 teaspoon garlic powder |
1/2 teaspoon cumin |
1/2 teaspoon paprika |
Directions:
1. Preheat oven to 400 degrees. 2. While chickpeas are in a colander, pat them dry with a paper towel to remove excess water. 3. In a large mixing bowl, toss chickpeas with the lime juice, olive oil, and seasonings. 4. Place chickpeas in a single layer on a baking sheet. 5. Bake for 35-40 minutes or until crisp and golden brown. |
