This is a simple crockpot soup that has Moroccan flavours. It's inexpensive, flavourful, and simple but still satisfying. Ingredients:
1 cup dried garbanzo beans |
8 cups water |
3 diced tomatoes |
2 stalks celery, diced |
1 onion, diced |
6 whole cloves |
1 inch cinnamon stick |
6 black peppercorns |
1 teaspoon cumin seed |
1/4 teaspoon red pepper flakes |
1/2 teaspoon turmeric |
salt |
olive oil |
parsley |
cilantro |
lemon juice |
yogurt |
hardboiled egg |
cumin |
salt |
Directions:
1. Rinse and sort through the chickpeas for any debris. 2. Place all ingredients in the crockpot. 3. Cover and cook 6-8 hours or until chickpeas are tender. 4. Garnish each bowl with olive oil and lemon juice and your choice of remaining garnishes. |
