This was supposed to serve 4 but as a side dish it goes a little further. Good for leftover ham. Ingredients:
2 cups (1 15 oz. can) chickpeas, rinsed & drained |
1/4 lb. sliced lean ham, cubed or in strips |
1 red bell pepper, chopped |
1 yellow bell pepper, chopped |
1 small red onion, chopped |
2 tablespoons apple cider vinegar |
2 teaspoons olive oil |
1/4 teaspoon dried thyme |
1/4 teaspoon salt |
1/4 teaspoon freshly ground pepper |
Directions:
1. Combine all ingredients in a large bowl. Serve at once or refrigerate, covered, up to overnight. 2. You can make it ahead of time by combining all but the ham and refrigerating it up to 3 days, just add the ham at serving time. |
