Quick, refreshing salad that we eat with spicy foods. Ingredients:
1 16-ounce can chickpeas, rinsed |
1 large, seedles cucumber, peeled and diced |
2 cups cherry tomatoes, halved |
1/4 cup crumbled feta cheese |
1/4 cup red onion, diced |
1/2 cup ranch dressing |
salt, freshly ground pepper, and dill to taste |
Directions:
1. Place chickpeas, cucumber, tomatoes, cheese, onion, dressing in a medium bowl. Mix until coated. Spice to taste. |
