A tasty dinner a co-worker made me. Yummy with a crusty baguette or warm naan! Ingredients:
3 chorizo sausages, cooked and crumbled |
3 cans garbanzo beans, drained |
1 c evoo |
1/3 c cider vinegar |
1 medium onion, finely chopped |
2-3 tbsp parsley, chopped |
3 cloves garlic, grated |
2 tsp oregano |
1 heaping tbsp ketchup |
salt and cayenne to taste |
Directions:
1. Place first two ingredients into a large bowl. 2. Place the next seven ingredients into a mason jar and shake until blended. 3. Pour over chorizo and chickpeas. 4. Add salt and cayenne to taste and mix. 5. Serve with a crusty baguette or naan bread. |
