For a meatless and high-fibre meal that both kids and parents can enjoy, try chickpea burgers for a change of pace, you will find them very different, yet so good!! Ingredients:
1/2 cup pecans |
1 (540 ml) can chickpeas, rinsed and drained |
3 tablespoons canola oil |
1 garlic clove, minced |
1 egg |
1/4 cup breadcrumbs |
1 cup green onion, chopped |
1/2 cup fresh parsley, finely chopped |
1 teaspoon dried rosemary |
1 tablespoon grated lemon rind |
2 drops hot sauce |
1 teaspoon worcestershire sauce |
salt and pepper |
canola oil, for brushing burbers |
4 slices cheese (optional) |
4 whole-wheat hamburger buns |
Directions:
1. In a baking sheet, spread pecans and bake in a 350F oven for 5-8 minute. Let cool. 2. In a food processor, purée chickpeas, toasted pecans, canola oil, garlic and egg until smooth. Transfer into a large bowl, stir in bradcrumbs. Stir green onions, parsley, lemon rind, hot sauce and Worcestershire sauce into mixture. 3. Form into 8 patties. 4. Brush patties with oil and fry on grill over medium heat for 3 minutes per side. Place each patty on bun half and top with cheese, if using. Also lettuce and other fixins! |
