An interesting version of chickpea burgers with walnuts and oats. Ingredients:
1 tablespoon vegetable oil |
1 medium yellow onion, chopped |
1 garlic clove, minced |
1 (15 ounce) can chickpeas |
1/2 cup walnuts |
1/2 cup rolled oats (not instant or quick-cooking oats) |
1 large egg |
1/2 teaspoon ground cardamom |
1/4 teaspoon ground cumin |
1/4 teaspoon smoked paprika |
1 teaspoon salt |
ground black pepper |
1 tablespoon olive oil |
Directions:
1. In skillet over medium heat, cook onion and garlic in oil until softened and very lightly browned. Pour contents of skillet into food processor fitted with the chopping blade. 2. Add chickpeas, nuts, oats, egg, and spices. Pulse until grainy but well-combined. 3. Shape mixture into 4 patties. Refrigerate for about an hour. 4. When ready to cook, heat olive oil in large skillet over medium heat and fry patties until darkly browned, even a little crunchy, turning once. Dress with your favorite condiments and fixings. 5. Burgers can be refrigerated for a day or so and crisped again in a skillet with a little oil. |
