A tasty salad and so quick and easy to make. Goes very well served with salmon.
Ingredients:
1/2 cup canned quartered artichokes, finely chopped
1/4 cup red onion, finely chopped
1 bag baby arugula leaves
1/2 cup canned chickpeas (garbanzos), drained and rinsed
3 tbsp red wine vinegar
1/3 cup olive oil
1/4 tsp kosher salt
1/8 tsp pepper
Directions:
1. Chop artichokes and onion
2. Combine arugula, chickpeas, onions, and artichokes
3. Whisk vinegar, oil, salt, and pepper until blended, add to salad.
4. Toss and serve
