Vegan red curry Ingredients:
324 g tofu |
2 cups cauliflower |
3 tbsps mirin |
1 1/2 cup diced tomatoes |
1/3 cup chickpeas |
1 tbsp coconut flakes |
1 tbsp yogurt |
1 tbsp curry powder |
1 tbsp cumin |
1 tsp turmeric |
1 tbsp soy sauce |
1 tbsp lime juice |
Directions:
1. chop cauliflower and cube tofu 2. add cauliflower tofu to mirin, soy sauce and lime juice 3. steam on medium for 3 minutes 4. add tomatoes and spices 5. simmer on low for 10-15 minutes |
