Chickpea and Salmon Salad |

A great summer salad. Ingredients:
2 (19 ounce) cans chickpeas, drained |
1 large green pepper, seeded, chopped |
2 tomatoes, cubed |
1/2 cup fresh parsley, chopped |
1/2 teaspoon garlic, finely diced |
1/3 cup green onion |
1/2 teaspoon cumin |
1/2 teaspoon salt |
1/4 teaspoon pepper |
1/4 cup salad oil |
1 tablespoon lemon juice |
1 (7 3/4 ounce) can salmon, drained |
Directions:
1. Combine all ingredient is a large bow, tossing them to mix well. 2. Adjust seasoning to taste. |
