A great summer salad.
Ingredients:
2 (19 ounce) cans chickpeas, drained
1 large green pepper, seeded, chopped
2 tomatoes, cubed
1/2 cup fresh parsley, chopped
1/2 teaspoon garlic, finely diced
1/3 cup green onion
1/2 teaspoon cumin
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup salad oil
1 tablespoon lemon juice
1 (7 3/4 ounce) can salmon, drained
Directions:
1. Combine all ingredient is a large bow, tossing them to mix well.
2. Adjust seasoning to taste.
