Yummy yummy... Ingredients:
1 cup garbanzo beans |
1 medium onion |
1 medium potato |
1/2 teaspoon ground cumin |
1/8 teaspoon cayenne pepper |
1 tablespoon lemon juice |
Directions:
1. Put chickpeas, chopped onion and 4 cups of water into a pot and bring to the boil. 2. Cover partially, turn heat to low and simmer for 1 hour. 3. Cube and add the potato, spices and another 1/2 cup of water. 4. Bring back to the boil, then reduce the heat and simmer on low for 1 1/2 hours. 5. Stir in the lemon juice, serve with desired amounts of salt and pepper. 6. Optional: Garnish each bowl with fresh parsley. |
