A fresh and zesty sandwich filler which I eatevery week. A great veganoption. Ingredients:
1 (15 ounce) can chickpeas |
2 tablespoons black olives |
1 tablespoon finely chopped red onion |
1 tablespoon chopped fresh parsley |
1/2 lemon |
1 teaspoon cumin |
salt |
pepper |
1 tablespoon olive oil |
Directions:
1. Mix all ingredients in a bowl apart from the chickpeas and blend for a few seconds. Then add chickpeas washed and drained and mash with a fork leaving a crunch texture. 2. Keeps in the fridge for up to 5 days,. |
