Chickpea and Pepper Sandwich Spread

A fresh and zesty sandwich filler which I eatevery week. A great veganoption.
Ingredients:
1 (15 ounce) can chickpeas
2 tablespoons black olives
1 tablespoon finely chopped red onion
1 tablespoon chopped fresh parsley
1/2 lemon
1 teaspoon cumin
salt
pepper
1 tablespoon olive oil
Directions:
1. Mix all ingredients in a bowl apart from the chickpeas and blend for a few seconds. Then add chickpeas washed and drained and mash with a fork leaving a crunch texture.
2. Keeps in the fridge for up to 5 days,.
