Ingredients:
1 (19 ounce) can chickpeas |
1 large tomato, chopped |
3 whole green onions, thinly sliced |
2 tablespoons vegetable oil |
1 tablespoon lemon juice |
1 teaspoon ground cumin |
1/2 teaspoon chili powder |
1/4 teaspoon salt |
Directions:
1. Rinse and drain chickpeas. 2. Place them in a bowl. 3. Add the tomatoes and onions. 4. Whisk remaining ingredients together. 5. Toss with chickpea mixture until coated. 6. Serve right away or refrigerate for up to 2 days. |
