Chickpea and Cheese Salad |

This salad works great for snacks, lunches, and parties! It's filling and tasty! Ingredients:
1 (19 ounce) can garbanzo beans, drained |
4 green onions, finely chopped |
1 green bell pepper, diced |
1 red bell pepper, diced |
1 tablespoon dried chives |
1 tablespoon dried dill weed |
1 cup havarti cheese cubes |
1 tablespoon red wine vinegar |
1/4 cup olive oil |
salt and pepper to taste |
2 teaspoons chopped fresh parsley |
Directions:
1. Mix the garbanzo beans, green onions, green bell pepper, red bell pepper, chives, dill, and Havarti cheese in a large bowl. 2. Whisk the red wine vinegar, olive oil, salt, and pepper together in a separate bowl; pour the mixture over the salad and toss to coat. Sprinkle parsley over the salad to garnish. |
