this is so easy and ingredients can be added,like] turky sausage,shrimp-love this with muligrain rolls,and a nice fruit salad. Ingredients:
2onions,chopped |
4 or 5 celery stalks |
chopped,3 cloves chopped garlic,or jarred minced garlic,3 boneless chicken breasts-cut in pieces,i bag of baby carrots |
fresh spinach |
i2 cans of cannellini beans,drained |
2 large boxes of chicken broth |
8 oz pkg mushrooms ,sliced |
salt,pepper to taste |
tablespoon crushed fennel seeds |
2 tablespoonschopped basil |
1 tablespoon crushed rosemary,if desired |
1 small box wild rice ,cooked |
1 teaspoon red pepper flakes,optional |
optional additions-cooked shrimp(last minute),turkey kiekbasa,cut in pieces |
Directions:
1. saute onions,celery and garlic in part olive oil-canola oil(1/4cup, in large soup pot,saute chicken pieces separately till no pink shows and add to pot ,add the carrots,seasonings,broth,beans, 2. stir and simmer for a few hours,add spinach(torn),and wild rice simmer another 15 miutes till spinach is just wilted, 3. you can add the shrimp then if desired -kielbasa can be added with the chickenladle into soup bowls and enjoy! 4. I am a throw in: cook, so i may add more seasonings ,more broth .or more rice if needed. . |
