This is absolutely delicious, and a great vegetarian substitute for chicken or turkey salad in sandwiches or over a bed of lettuce. If you have access to it, use a vegetarian chicken broth to rehydrate the soy pieces. Ingredients:
35g dry textured soy protein slices (like so soya+ brand) |
pinch salt |
pinch poultry seasoning |
3/4 cup boiling water |
1 tbsp fat free nayonnaise |
2 tsp yellow mustard |
1 tbsp sugar-free cranberry sauce (i make my own) |
1 tsp lemon juice |
1 tsp water |
fresh ground black pepper |
Directions:
1. Combine soy slices, salt and poultry seasoning in a small, microwaveable bowl. 2. Pour hot water overtop and microwave 30-45 seconds. Let stand 10 minutes and drain. 3. In a small dish mix Nayonnaise, mustard, cranberry sauce, lemon juice, water and pepper. 4. Add drained soy slices and toss to coat. 5. Use however you wish - on a salad, in a pita or on a roll. |
