Chicken With White Wine Sauce |

So easy...and tastes great! Good to have when you need something that looks & tastes elegant, wtih not much effort! From the Sandra Lee Semi-Homemade Cooking cookbook (I like to add capers) Ingredients:
24 pearl onions, peeled |
8 oz fresh mushrooms, sliced |
4 strips thick cut bacon |
4 pounds meaty skinless/boneless chicken pieces (breasts and thighs) |
salt and pepper |
1 can cream of chicken & mushroom soup |
1 cup dry white wine |
2 t. italian seasoning |
2 t chopped garlic |
(i add 2 t of capers) |
Directions:
1. Add pearl onions and mushrooms to a 4-5 qt slow cooker 2. In a large skillet, over medium heat, fry bacon until crispy 3. Set aside 4. Discard all but 2 T of fat 5. Season cut up chicken wtih salt and pepper 6. Over medium-high heat, brown chicken pieces in bacon fat 7. Place browned chicken in slow cooker 8. In a medium bowl, stir together soup, wine, italian seasoning, capers, and garlic 9. Pour over chicken 10. Cover and cook on low heat stting for 8 hours (3-4 hours on high) 11. To serve, ladle sauce over chicken and garnish with crumbled bacon |
