Chicken With White Beans and Baby Spinach |

I found this recipe in Readers Digest in an ad for Promise butter. I tweaked it to fit my DH and my tastes and it came out quite good. It's a great low fat, healthy dish which is really more like soup and is great on a cold winter night. It's also real quick to make after coming home from working all day. Putting it here on Zaar so I can find it again. Ingredients:
1 lb chicken breast, boneless, skinless |
1/2 teaspoon dried thyme leaves |
1/8 teaspoon fresh ground pepper, more to taste |
1 1/2 tablespoons butter, no transfat spread like promise |
1 medium onion, chopped fine |
3 garlic cloves, minced |
1 1/2 cups chicken broth, low-fat, low sodium |
1/4 cup dry white wine |
1 (16 ounce) can cannellini beans, rinsed and drained |
1 (10 ounce) bag baby spinach |
Directions:
1. Cut chicken breasts into strips and season with thyme and black pepper. 2. Melt 1 tablespoons butter in skillet over medium high heat. 3. Add chicken to the butter and brown over medium high heat about 3 - 4 minutes. 4. Move chicken to side and add 1/2 tablespoons of butter. Add minced garlic and onion (note I use onion powder only because my DH can't eat real onions - I know how awful to not cook with real onions). 5. Saute 1 minute and then add broth and white wine. I used Pinot Grigio because that's what I had on hand. 6. Bring to a boil and reduce heat - simmer 5 minutes. 7. Stir in beans which have been rinsed and drained and the spinach leaves. 8. Simmer 5 more minutes until chicken cooked through. |
