Chicken With Tomatoes & Mushrooms |

I made this up, trying to imitate a dish from a restaurant. It didn't come out like I was aiming for, but it did come out VERY good, so I thought I'd post it. My husband devoured it in about 5 minutes, he liked it that much. Ingredients:
2 boneless skinless chicken breasts |
1 clove garlic, minced or chopped very finely |
1/2 cup chopped tomato (i used grape tomatoes) |
1 1/2 cups sliced mushrooms |
1 cup cooked brown rice |
1/2 cup shredded cheese (any type) |
seasoning salt, to taste |
cooking spray |
Directions:
1. Pound chicken as thin as you like. 2. Sprinkle with seasoned salt. 3. Spray a frying pan with cooking spray (or butter if you want more flavor) and cook chicken about 5 minutes on both sides, until no longer pink in the center. 4. Meanwhile, spray a small saucepan with cooking spray (or butter) and add garlic. 5. Cook garlic about 2-3 minutes. 6. Add mushrooms and tomatoes to garlic, and cook until the mushrooms have softened. 7. Cook rice according to how you like it. 8. Lay 1/2 cup rice (each) on 2 dinner plates. 9. Put chicken on top of rice, and top the chicken with the mushroom/tomato/garlic mixture. 10. Top that with the shredded cheese. |
