I received this recipe from my sister and it is one of the favorite dishes in South Louisiana. It is certainly one of our favorites. Ingredients:
3 -4 lbs hen or 2 rabbits or 2 squirrels, cut up |
1/2 cup flour |
1/2 cup oil |
4 onions, chopped |
1 cup green pepper, chopped |
3 garlic cloves, minced |
3 stalks celery, chopped |
8 ounces tomato sauce |
1 (6 ounce) can sliced mushrooms |
2 bay leaves |
1 cup dry vermouth |
salt and pepper |
Directions:
1. Make a roux with oil and flour. 2. Add onions, garlic, green pepper and celery. 3. Cook until tender. 4. Add all other ingredients and cook until game is tender. 5. Serve over rice. |
