Simple, low-fat, and tastes great! Try it over pasta. Ingredients:
4 boneless skinless chicken breast halves |
1/2 teaspoon salt |
1/4 teaspoon pepper |
2 (7 ounce) jars roasted red peppers (throw in the juice too) |
4 cloves minced garlic |
1/4-1/2 cup white wine |
1 teaspoon vinegar |
parsley |
Directions:
1. In olive oil flavored spray, brown chicken. 2. Add all other ingredients and simmer until hot. 3. Serve with pasta or rice. |
