Chicken With Prosciutto and Bean Puree |

From Fast Chicken / Hawthorn Series Ingredients:
4 chicken breast fillets |
2 tablespoons olive oil |
1 tablespoon lemon juice, freshly squeezed |
1 tablespoon rosemary, fresh, chopped |
4 slices prosciutto |
400 g cannellini beans |
2 teaspoons rosemary, fresh, chopped |
2 garlic cloves, chopped |
2 tablespoons cream |
Directions:
1. Slash the chicken breasts 3-4 times diagonnaly. Place in a dish and coat with the oil,juice and rosemary. Set aside. 2. Heat a little oil in a heavy based pan. Add the chicken and cook for 3-4 minutes,each side turning once. 3. Brush 2-3 times with the marinade. 4. Remove the chicken and wrap a slice of prosciutto around each fillet. 5. Return to the pan and cook for a further 1-2 minutes, turning once. 6. To make bean puree:Process all the ingredients in a food processor or blender. With the motot running add the cream. Heat gently till warm. |
