My mother in law made this chicken the very first time we ever met. It is so delicious that I just had to have the recipe. It is similar to sweet and sour chicken. Ingredients:
1/2 cup flour |
1/2 cup cornstarch |
2 teaspoons baking powder |
1 teaspoon salt |
2 eggs |
1/2 cup milk |
2 -3 lbs chicken, cut into bite size pieces (i use boneless skinless breasts) |
1/2 cup crushed pineapple in juice |
1/4 cup sugar |
1/4 cup water |
1/4 cup vinegar |
3/4 teaspoon soy sauce |
1/4 cup plum preserves or 1/4 cup plum jam |
1 1/2 teaspoons cornstarch |
1 1/2 teaspoons water |
Directions:
1. Mix the first 4 ingredients well. Add eggs and milk. Whisk together well to make batter. Dip chicken pieces in batter and deep fry. Drain on a pan lined with paper towels. 2. In a sauce pan, mix pineapple, sugar, water, vinegar and soy sauce. Bring to a boil. Mix corn starch and water together. Add to the sauce pan. Bring to a boil again. When thick, let cool for 15 minutes Add plum preserves and mix well. 3. Serve sauce over chicken or as dipping sauce. |
