Chicken With Plum Sauce

My mother in law made this chicken the very first time we ever met. It is so delicious that I just had to have the recipe. It is similar to sweet and sour chicken.
Ingredients:
1/2 cup flour
1/2 cup cornstarch
2 teaspoons baking powder
1 teaspoon salt
2 eggs
1/2 cup milk
2 -3 lbs chicken, cut into bite size pieces (i use boneless skinless breasts)
1/2 cup crushed pineapple in juice
1/4 cup sugar
1/4 cup water
1/4 cup vinegar
3/4 teaspoon soy sauce
1/4 cup plum preserves or 1/4 cup plum jam
1 1/2 teaspoons cornstarch
1 1/2 teaspoons water
Directions:
1. Mix the first 4 ingredients well. Add eggs and milk. Whisk together well to make batter. Dip chicken pieces in batter and deep fry. Drain on a pan lined with paper towels.
2. In a sauce pan, mix pineapple, sugar, water, vinegar and soy sauce. Bring to a boil. Mix corn starch and water together. Add to the sauce pan. Bring to a boil again. When thick, let cool for 15 minutes Add plum preserves and mix well.
3. Serve sauce over chicken or as dipping sauce.
