Chicken With Pepper and Parsley Crust

A low fat chicken dish which is also tasty! Serve with new potatoes and salad or pasta.
Ingredients:
4 skinless boneless chicken breasts
1 small red pepper, deseeded and roughly chopped
2 cloves garlic, peeled and roughly chopped
1 ounce parsley
2 tablespoons olive oil
Directions:
1. Heat the oven to 400°F.
2. Put the chicken in a shallow ovenproof dish or roasting tin.
3. Put the pepper, garlic and parsley in a food processor and pulse a few times until coarsely chopped. Stir in the oil and season with salt and pepper.
4. Spread this mixture over the chicken breasts.
5. Spoon 2 tbs of water into the base of the tinn or dish, then roast for 20-25 mins until the chicken is cooked through.
6. Serve with your choice of accompaniments.
