Chicken with Pasta, Spinach and Mushrooms Ingredients:
1 cup rigatoni |
3 tbsp olive oil |
1 lb chicken, boneless, cut into 1 inch pieces |
2 cloves garlic, finely chopped |
1/4 cup chicken broth |
10 oz fresh spinach, stims trimmed, chopped |
1 cup button mushrooms |
1/8 tsp crushed red pepper |
1/2 cup parmesan cheese |
Directions:
1. Cook the pasta according to package. Drain. 2. Warm 2 tbsp oil in a skillet over medium-high heat. Season chicken with salt and pepper. Satue chicken until golden brown and cooked throughout, 3 minutes. Transfer to a plate. Cover to keep warm. 3. Warm remaining oil in skillet. Saute garlic for 1 minute. Pour in broth and cook 1 minute longer stirring up and browned bits. Add spinach, mushrooms and pepper. Cook stirring until spinach has wilted and mushrooms are golden, 7 minutes. Add chiocken and pasta. Stir to combine. Top with Parmesan and serve. |
