Chicken With Pasta and Vegetables |

An easy one-dish meal. Ingredients:
2 cups pasta (small shells or penne) |
2 teaspoons olive oil |
1 cup mushroom, cleaned and sliced |
1 cup bell pepper, cut into 2 inch strips |
1/2 cup broccoli floret |
15 ounces chicken broth |
2 cups chicken breasts, cooked and cut into 1 inch dice |
fresh ground pepper |
1 teaspoon dried rosemary |
4 tablespoons grated parmesan cheese |
1 cup grape tomatoes, cut in 1/2 |
Directions:
1. Cook pasta according to package directions. Drain and set aside. 2. Add oil to a large skillet and heat over medium high heat. Sauté vegetables until tender crisp, stirring occasionally, about 5 minutes. Add cooked pasta, cooked chicken, broth, and seasonings. Simmer about 5 minutes. 3. Before serving, add tomatoes and sprinkle with grated Parmesan cheese. |
