Chicken With Parsley Sauce |

This dish starts on the stovetop, then moves into the oven to bake. It is finished off by broiling to lightly brown the top. It goes well with a lightly buttered vegetable like broccoli or cauliflower. Ingredients:
1 (2 1/2 lb) whole chickens, cut up |
salt & freshly ground black pepper |
2 tablespoons butter |
2 tablespoons olive oil |
1/4 cup breadcrumbs (plain or flavored) |
2 tablespoons shallots, finely chopped |
1 garlic clove, minced |
2 tablespoons parsley, finely chopped |
Directions:
1. Melt butter in a skillet over medium high heat. Add olive oil. Season chicken pieces with salt and pepper. Cook about 5 to 10 minutes until lightly browned on one side. Turn and cook until other side is lightly brown. 2. Place chicken in a baking dish. Combine bread crumbs, shallots, garlic, and parsley. Sprinkle over chicken pieces. 3. Bake 10 minutes at 400 degrees F until chicken is done. 4. Cook under broiler briefly to brown the top quickly. |
