Chicken With Parsley Sauce

This dish starts on the stovetop, then moves into the oven to bake. It is finished off by broiling to lightly brown the top. It goes well with a lightly buttered vegetable like broccoli or cauliflower.
Ingredients:
1 (2 1/2 lb) whole chickens, cut up
salt & freshly ground black pepper
2 tablespoons butter
2 tablespoons olive oil
1/4 cup breadcrumbs (plain or flavored)
2 tablespoons shallots, finely chopped
1 garlic clove, minced
2 tablespoons parsley, finely chopped
Directions:
1. Melt butter in a skillet over medium high heat. Add olive oil. Season chicken pieces with salt and pepper. Cook about 5 to 10 minutes until lightly browned on one side. Turn and cook until other side is lightly brown.
2. Place chicken in a baking dish. Combine bread crumbs, shallots, garlic, and parsley. Sprinkle over chicken pieces.
3. Bake 10 minutes at 400 degrees F until chicken is done.
4. Cook under broiler briefly to brown the top quickly.
