Chicken With Orzo and Veggies |

Pleasant change from the usual pasta meals, quick and easy. Ingredients:
3 tablespoons olive oil |
1 large red onion, finely chopped |
4 garlic cloves, smashed |
1 sweet red pepper, diced |
1 (14 ounce) can chicken broth |
2 cups broccoli florets, cut into bite-size pieces |
3/4 cup orzo pasta, uncooked |
1 lb boneless skinless chicken breast, cut into 1 inch pieces |
1 1/2 cups corn (fresh or frozen) |
1/2 teaspoon salt |
1/2 teaspoon pepper, fresh ground |
3/4 cup parmesan cheese, shredded |
Directions:
1. Heat oil in a large frypan over medium high heat. Add onion, garlic and red pepper. Cook 2 minutes. Add broth, broccoli and orzo. 2. Reduce heat to medium, cover and cook for 6 minutes, stirring occasionally. 3. Add chicken and corn, cook an additional 8 minutes or until chicken juices run clear. 4. Remove from heat, season with salt and pepper and gently stir in cheese. 5. Serve immediately. |
