Chicken With Oregano and Lemon |

This is a great one dish dinner which is ready in under half an hour. Serve with Greek salad and some good bread. Ingredients:
4 boneless chicken breasts |
2 teaspoons dried oregano |
salt |
ground black pepper |
2 tablespoons olive oil |
1 1/2 lbs potatoes, cut into 1/4-inch thick slices |
1 bunch green onion, coarsely chopped |
1/2 cup chicken broth |
1/4 cup lemon juice |
2 sprigs fresh oregano, chopped |
Directions:
1. Season the chicken with the dried oregano, salt and pepper. 2. Heat the oil in a large frying pan. 3. Add the chicken, potatoes and green onions, and brown quickly for 2 to 3 minutes. 4. Pour in the broth, cover, and simmer for 10 to 15 minutes, or until the chicken is cooked. 5. Add the lemon juice and fresh oregano. 6. Cook for another 3 minutes. 7. Serve immediately. |
