Chicken With Olives and Prunes |

It is always a treat to serve this. I love the way the flavors combine and mix to a perfect balance. It's a no hassle recipe that is a breeze to make. I serve this with a plain white rice and a vegetable side dish for an elegant yet simple meal. Ingredients:
3 garlic cloves, crushed |
2 tablespoons dried oregano |
1/4 cup red wine vinegar |
1/4 cup olive oil |
1/3 cup pitted spanish olives |
1/3 cup pitted prunes |
1/2 cup capers |
2 bay leaves |
1 whole chicken, quartered |
1/3 cup brown sugar |
1/3 cup white wine |
1/4 cup coriander, finely chopped |
Directions:
1. Create the marinade by mixing the garlic, oregano, vinegar, olive oil, olives, prunes, capers and bay leaves. In a large bowl pour marinade over the chicken and let it sit in the refrigerator overnight. 2. Preheat oven to 350. Lay chicken in a single layer in an ovenproof pan. Spoon marinade on top of chicken. Pour white wine on top and sprinkle with brown sugar and coriander. Bake for one hour. |
