Yummy tender broiled chicken. Ingredients:
4 chicken breasts |
1 cup plain yogurt |
1 1/2 teaspoons curry powder |
1 tablespoon lemon juice |
1 teaspoon olive oil |
2 teaspoons gingerroot, grated |
1/8 teaspoon salt |
1/8 teaspoon black pepper |
Directions:
1. In a small bowl combine all ingredients except chicken. 2. Place chicken in a shallow pan and cover with yogurt mixture, turning to coat. 3. Marinate in refrigerator for at least an hour. 4. Broil 6 inches from heat, about 6 minutes per side, depending on the thickness of the chicken. |
