Chicken With Green Chili Sauce for Two |

This dish is tangy and flavorful without being spicy. Quick and Easy. Ingredients:
2 chicken breasts, boneless, skinless |
1/2 teaspoon cajun seasoning |
2/3 cup cream of chicken soup, undiluted |
1/4 cup water |
4 ounces of chopped green chilies |
1/2 teaspoon lemon juice |
2 tablespoons sour cream |
1 1/2 cups cooked rice |
Directions:
1. Sprinkle chicken with Cajun seasoning. 2. Spray medium skillet with cooking spray. 3. Brown chicken on both sides. 4. In small bowl, combine the soup, water, chilies and lemon juice. 5. Stir into skillet. Bring to boil. 6. Reduce heat; cover and simmer for 8-10 mins or until juices run clear. 7. Remove from heat; stir in sour cream. 8. Serve over rice. |
