Chicken With Green Chiles and Cheese |

This yummy chicken dish combines a lot of our favorite flavors into one easy, quick, satisfying and (f you use low fat cheese and sour cream) healthy meal! Served with a salad and a side of mexican-inspired rice and you've got a sure hit on your hands! **As always - let your own taste preferences be your guide when adding cheese and/or chiles to the recipe. Ingredients:
4 boneless skinless chicken breasts |
1 1/2 cups mexican blend cheese |
2 ounces rotel, with liquid |
3/4 cup sour cream |
1/4 cup breadcrumbs |
olive oil |
Directions:
1. Preheat oven to 375 degrees. 2. Mix cheese, Rotel and sour cream in a small bowl. 3. Pour breadcrumbs into a shallow pan or dish. 4. Flatten chicken breasts to approximately 1/4 inch thickness. 5. Place 1/4 of cheese mixture onto each chicken breast, starting with small end, roll tight and secure with toothpicks. 6. Dredge each roll in breadcrumbs. 7. Place in baking dish and drizzle with olive oil. 8. Bake, uncovered, for 35 to 40 minutes or until chicken is no longer pink and starts to brown. 9. If prefered, sprinkle with more cheese and broil for 3 to 5 minutes until cheese is bubbly. 10. Serve with salsa, sour cream, cheese - Enjoy! |
