Two types of grapes, apple, pecans, and chicken help make this salad delicious and healthy! Ingredients:
1/2 lb boneless skinless chicken breast |
1/2 cup red seedless grapes, cut in half |
1/2 cup green seedless grape, cut in half |
1 apple, cored and diced |
1/2 cup fat-free mayonnaise |
1 lemon, juice of |
1/4 teaspoon ground black pepper |
2 cups baby romaine lettuce, chopped |
2 tablespoons chopped pecans |
Directions:
1. Chop the chicken into bite-size pieces. 2. Cook chicken in a large nonstick skillet over medium heat until chicken is no longer pink in the center, about 5 minutes. 3. Combine apples, grapes and lemon juice in large bowl, then add chicken, black pepper, and mayonnaise. 4. Divide lettuce on 2 small plates, spoon chicken mixture over lettuce, and top each with 1 tablespool chopped pecans. |
