Chicken with Dried Cherry Sauce |

I like this dish with wild rice and a tossed salad with chopped apples and mandarine oranges. Ingredients:
1/4 cup flour |
1/2 teaspoon salt |
4 boneless skinless chicken breast halves |
1 teaspoon butter |
1/2 cup cranberry juice cocktail |
1/2 cup ruby port |
4 teaspoons brown sugar |
1 teaspoon tarragon, dried |
1/4 cup dried tart cherries |
1 teaspoon balsamic vinegar |
1 teaspoon cornstarch |
2 teaspoons water |
Directions:
1. Place flour and salt in a bag-add chicken-shake to coat. 2. Melt butter in a large skillet over medium heat. 3. Add chicken, cook 8 minutes on each side-depending on the size of the breasts-until done. 4. Remove chicken and set aside, keeping warm. 5. Add juice to skillet and the next 5 ingredients, bringing mixture to a boil. 6. Cover and reduce heat, simmering for 5 minutes. 7. Combine cornstarch and water-add to juice mixture. 8. Bring to a boil and boil for 1 minute, stirring constantly. 9. Remove from heat. 10. Serve sauce with chicken. |
