Chicken with Creole Cabbage |

Ingredients:
4 (4-ounce) skinned, boned chicken breast halves |
1/4 teaspoon salt |
1/4 teaspoon pepper |
butter-flavored vegetable cooking spray |
3 cups coarsely chopped cabbage |
1/4 cup water |
1/2 teaspoon sugar |
1/4 teaspoon ground red pepper |
1/8 teaspoon ground allspice |
1 clove garlic, minced |
1 (15-ounce) can tomato sauce with onion, green peppers, and celery |
Directions:
1. Sprinkle chicken with salt and 1/4 teaspoon pepper. Coat a large nonstick skillet with cooking spray; place over medium-high heat until hot. Add chicken, and cook 3 to 5 minutes on each side or until browned. Remove chicken from skillet. Add cabbage and remaining 6 ingredients to skillet; stir well. 2. Place chicken over cabbage mixture. Bring to a boil; cover, reduce heat, and simmer 15 minutes or until chicken is done and cabbage is tender, stirring occasionally. |
