Chicken With Creamy Tomato Sauce |

I found this on Thinner Times. This came from Eating Well after Weight Loss Surgery. I havenot tried this, just posting for future use. Ingredients:
1 lb thin chicken breasts or 1 lb chicken cutlet |
1 lb sliced fresh mushrooms |
1 finely chopped onion |
1/4 cup white wine (i used white cooking wine from walmart) |
1/2 cup canned diced tomato, drained |
5 ounces evaporated milk |
salt and pepper |
Directions:
1. Spray pan with nonstick cooking spray and cook chicken. Remove chicken from pan to a plate. 2. Then add mushrooms and onion to pan and saute until cooked. Add wine, tomatoes, and evaporated milk. Add back into pan any chicken juices that have accumulated on plate. Cook about 6 to 8 minutes until mixture has thickened up and reduced to about half the original size. Season to taste with salt and pepper. Add chicken back in and heat thoroughly. 3. Serve chicken with sauce on top. |
